Cannelloni Crespelle
Ingredients
1 batch of Basic Crepes
1 batch of Fast & Simple Meaty Marinara
1 batch of Basic Alfredo Sauce
Provolone cheese, thinly sliced
Parmesan cheese, grated
Cooking spray
Tools
9" x 13" baking pan
Spatula
Instructions
Heat oven to 400° F.
Prepare the baking pan with a very light coating of cooking spray.
On a crepe, add 1½ to 2 tablespoons of the marinara. Roll the crepe like a burrito and tuck the ends under. Repeat for all 12 crepes.
Arrange the crepes in the baking pan. I usually to two end-to-end across the narrow dimension and make 6 rows.
Cover crepes with alfredo.
Lay a single layer of provolone slices over the crepes.
Sprinkle with parmesan.
Bake for 25 minutes until the cheese is melted and golden brown.
Remove from oven and allow to sit for 5 minutes.
Footnotes
I cook this in a pyrex baking dish and it works great. The pan doesn't get hot enough to cause the cooking spray to leave a residue so it's OK to use spray for this.
This recipe can make 6 normal sized portions. But if you've got a big appetite, have more!
